Klaus-Jürgen Wrede's Carcassonne has been teaching people what a modern board game is since 2000, and it still does the job better than almost anything since. You draw a tile, you place it so the roads and fields and city walls line up, and you decide whether to spend one of your limited followers claiming what you have just built. Southern France assembles itself on the table in front of you, one tile at a time.

The Big Box is the base game together with eleven expansions, which is the version to buy if you already know you like it. Inns and cathedrals, traders and builders, the river, the abbot — you can add them one at a time and watch the game change shape rather than dumping everything in at once. The core tension never moves: a follower placed on a city is a follower you do not have for the next opportunity, and the person who over-commits early spends the back half of the game watching.
